## Ingredients

- 1 cup hot water, just off the boil
- 1-inch piece fresh ginger, thinly sliced
- Juice of half a lemon
- 1 teaspoon raw honey
- A pinch of black pepper

## Method

1. Pour hot water over the sliced ginger and let it steep for three minutes.
2. Stir in the lemon juice and honey until dissolved.
3. Add the pinch of black pepper and sip slowly.

## Notes & Substitutions

#### No fresh ginger?

Use ¼ teaspoon ground ginger instead, added with the honey rather than steeped.

#### No raw honey?

Maple syrup works as a substitute, though the flavor will be slightly less rounded.

#### Make it ahead

The ginger can be sliced and stored in the fridge for up to three days before you need it.
